Longitude 131° sits among red dunes within sight of Uluru, its 15 tented pavilions arranged around the Dune House, where the day tends to end with cocktails and a long look at the rock changing color. Table 131 degrees serves a set, culturally inspired menu in the dunes each evening, and the Field of Light, Bruce Munro's installation of more than 50,000 solar lights scattered across the desert floor, is included for every guest.
