Look out for one of the Pavilion’s signature dishes, ocean trout topped with champagne jelly, apple, asparagus, and passion fruit. The restaurant, Long Pavilion, is all about seven-course meals that include dishes such as the organic chicken with autumn vegetables and the Tasmanian salmon with whiting and enoki. Culinary also comes alive with ‘Talk and Taste’ events with the chefs discussing house favorites such as sashimi, oysters, and Australia’s wines and cheeses.

The ultimate compliment, Champagne and Oysters represent subtle and elegant flavours and are a superb expression of luxury. qualia presents a unique tasting experience where different styles of Oyster are paired with top Australian and French bubbles. Guests are given an understanding of their palates and how Champagne and Oysters are paired and then given the opportunity to explore. The host will give a brief description of the champagne making process and also teaches how to skilfully shuck oysters.
